Weight Watcher Mini Muffins

Recipe from Weight Watchers

Ingredients

  • 3 cups of All Bran Cereal (original not buds)
  • 2-1/2 cups water
  • 1-1/4 teaspoons baking powder
  • 1 package of Betty Crocker Reduced Fat Brownie Mix
  • 4 ounces mini chocolate chips

Original recipe does not include any of the following optional items, but they add richness to the taste and add very few calories.  

  • Raisins
  • Craisins (dried cranberries)  
  • Cherries (dried or a can of tart cherries, unsweetened, chopped)

Directions

Cover the All Bran with the water and let sit for 5 minutes or so. Add the rest of the ingredients and any of the optional items you wish.

Spray 48 mini or 24 regular muffin wells with butter flavored spray.  Bake in a 350 degree oven as follows:

For mini muffins: bake 12 – 15 minutes   

For regular muffins:  bake 20 – 25 minutes

Yield: 48 mini muffins or 24 regular muffins
