Watercress Salad with Walnuts

Salad Ingredients

  • 2 bunches watercress, washed and broken into mouth size pieces
  • 5 ounces Swiss cheese, cut into thin rectangles
  • 3 green Granny Smith apples, cut into cubes
  • 1 cup chopped walnuts
  • 4 tablespoons chopped red onions

Vinaigrette

  • 1/2 cup olive oil
  • 1/4 cup vinegar
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sugar
  • 1 teaspoon mustard
  • 1 1/2 garlic cloves

Directions

Blend all vinaigrette ingredients for 2 minutes. Refrigerate for two hours. Mix with salad ingredients. Serve immediately. 

Yield: 12 servings
