Ingredients

  • 2 Tbsp. white wine vinegar
  • 1 Tbsp. olive oil
  • Zest and juice of 1 lime
  • 2 cups jicama, grated
  • ½ cucumber, grated
  • 4 red radishes, grated
  • 1 carrot, grated
  • ½ cup onion, grated
  • ½ cup cilantro, chopped

Directions

  1. Whisk together the white wine vinegar, olive oil and lime.
  2. Toss together the dressing and remaining vegetables.

Yield: 6 cups

Serving: 1 cup
