Jicama Slaw

Ingredients
- 2 Tbsp. white wine vinegar
- 1 Tbsp. olive oil
- Zest and juice of 1 lime
- 2 cups jicama, grated
- ½ cucumber, grated
- 4 red radishes, grated
- 1 carrot, grated
- ½ cup onion, grated
- ½ cup cilantro, chopped
Directions
- Whisk together the white wine vinegar, olive oil and lime.
- Toss together the dressing and remaining vegetables.
Yield: 6 cups
Serving: 1 cup
