Hummus Deviled Eggs

Ingredients
- 8 eggs, hard-boiled and peeled
- 1 (14.5 oz) can garbanzo beans, drained and rinsed
- 2 cloves garlic
- 1 small lemon, zested and juiced
- 1 Tbsp. olive oil
- ¼ cup fat-free, reduced sodium chicken or vegetable broth
- ¼ tsp black pepper, ground
- ¼ cup salsa
- 1 Tbsp. fresh parsley, chopped
Directions
- Slice hardboiled eggs in half lengthwise and discard the yolk.
- Add garbanzo beans, garlic, lemon zest, lemon juice, olive oil, broth, pepper, salsa and parsley to a blender or food processor. Process until hummus is smooth.
- Fill each egg half with a heaping tablespoon of hummus.
Yield: 8 servings
