Grilled Romaine Lettuce

Ingredients
- 2 heads of fresh, firm romaine lettuce, cut vertically in half (you will have 4 halves)
- 1 Tbsp. olive oil
- salt
- black pepper
- 1 medium lemon, cut in half (optional)
- 4 Tbsp. fresh parmesan cheese (optional)
Directions
- Make sure grates of grill are clean. Turn grill to medium high.
- Brush lettuce halves with 1 Tbsp. olive oil (to keep lettuce from sticking to grill).
- Sprinkle each lettuce half with salt and pepper (or any other seasonings you enjoy).
- Grill for 3 minutes, cut side down. Flip and grill for 1-2 more minutes.
- Remove from grill.
- Optional: Squeeze fresh lemon juice over each half. Top each half with a tablespoon of parmesan.
- Chop lettuce and top with your choice of toppings and/or dressing.
Yield: 4 servings
