Fast Farro Salad

Recipe adapted from Family Food on the Table.

Fast Farrol saladIngredients

  • 1 ½ c. farro (or pearled barley)
  • 2 tsp. sunflower oil
  • 1 small yellow bell pepper, diced
  • 1 small zucchini, diced
  • 1 ½ c. cherry tomatoes, halved
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 tsp. apple cider vinegar
  • 3 green onions, thinly sliced

Preparation

  • Cook farro according to package directions.
  • Meanwhile, chop veggies and heat 1 tsp. oil in a sauté pan over medium heat.
  • Add bell pepper and sauté for 2 min.
  • Add zucchini and season with salt and pepper. Sauté veggies until tender, about 5 min.
  • Add tomatoes and cook until heated through, about 2 min.
  • Transfer farro to a bowl and top with veggies.
  • Drizzle apple cider vinegar and remaining oil; mix well and season with salt and pepper.
  • Garnish with chopped green onions.

Serves 4.
