Crispy Oatmeal Chocolate Chip Cookies

Ingredients

  • 3/4 cup canola oil
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla
  • 1/4 cup silken tofu
  • 1/4 cup soy milk
  • 1 1/2 cup all-purpose flour
  • 1/2 cup soy flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup quick oatmeal
  • 1 cup chocolate chips
  • 1/3 cup unsalted soy nuts, crushed

Directions

Preheat oven to 350 degrees. 

Mix oil and sugars in a large mixing bowl.  Add vanilla, tofu and milk.  In a separate bowl, stir together flours, soda, baking powder and salt.  Gradually add dry mixture to creamed mixture.  Stir in oats, chocolate chips and soy nuts until well-blended. 

Bake on a lightly sprayed cookie sheet for 11–12 minutes.

Yield: Approximately 6 dozen cookies (1 serving = 1 cookie)
