Cheese & Spinach Stuffed Chicken

Ingredients

Filling

  • ½ c. goat cheese, softened
  • ¼ c. tomatoes, chopped
  • 1 ½ c. fresh spinach, packed, thinly sliced
  • ¼ tsp. salt
  • ¼ tsp. pepper

Chicken

  • 4 boneless, skinless chicken breasts (5 oz. each)
  • 2 tsp. sunflower oil
  • ½ tsp. salt
  • ½ tsp. ground pepper

Preparation

  • Preheat oven to 375 degrees; combine filling ingredients in a medium bowl.
  • Insert a knife into the thickest part of each chicken breast and cut 2-3” pocket.
  • Stuff each chicken breast with a fourth of the filling.
  • Rub chicken breasts with sunflower oil; season with salt and pepper.
  • Heat a large nonstick, ovenproof skillet over medium-high heat.
  • Cook chicken breasts until golden brown, about 3 min. per side.
  • Place skillet in the oven and bake until chicken is cooked through, 10-12 min.
  • Cool for 10 min.

Serves 4.
