Black Bean Soup

Ingredients
- 1 chopped onion
- 1 tablespoon cumin
- 4 minced garlic cloves
- 3 1/2 cups low-sodium chicken broth
- 3 chopped tomatoes (or one (1) can, no-salt added, petite diced tomatoes)
- One 15-ounce can reduced sodium black beans
- One 1.4-ounce can diced green chili peppers
Directions
Add all ingredients to a soup pot. Bring to a boil, cover, and simmer 5 minutes.
Yield: 7 cups
Serving: 1 cup
