Roasted Curried Cauliflower

Ingredients

  • 6 cups cauliflower florets (about 1 medium head)
  • 1½ tablespoons olive oil
  • ½ teaspoon Madras curry powder
  • ¼ teaspoon kosher salt

Directions

  1. Preheat oven to 475º.
  2. Combine all ingredients on a jelly-roll pan; toss well to coat. Bake at 475º for 18 minutes or until browned and crisp-tender, stirring occasionally.
