Penne with Sundried Tomatoes


  • 1 pound penne pasta
  • 3 to 4 sundried tomatoes cut in julienne strips
  • 2 garlic cloves, chopped
  • 1/8 cup extra-virgin olive oil
  • 1 tablespoon parsley, chopped
  • 1 teaspoon thyme, chopped
  • 1/2 teaspoon salt
  • Pepper to taste


Bring a large pot of water to a boil and add salt. In a large skillet over medium heat, warm the olive oil. Add the garlic and sauté for 5-6 minutes. Add the sundried tomatoes, parsley and thyme, and heat to warm.

Meanwhile, cook the pasta according to package directions. Drain and pour over the tomato mixture. Toss together and season to taste with pepper, salt or olive oil.

Yield: 8 servings
