Guacamame Dip

It looks like guacamole, but it’s made with edamame (green soybeans)!

Ingredients

  • 1 (12-ounce) bag of shelled edamame, cooked  (These soybeans are available in the frozen foods section.)
  • 1/2 teaspoon salt
  • 1 tablespoon chopped garlic or 1/8 teaspoon garlic powder
  • 5 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sugar or Splenda
  • 1/2 teaspoon pepper

Directions

Mix all ingredients in food processor or blender until the mixture is smooth.  

Yield:  2-1/2 cups.  (1 serving = 1/4 cup)
