Green Pea Salad

Green Pea SaladRecipe adapted from Well Plated.

Ingredients

  • 3 bacon strips
  • ½ c. plain non-fat Greek yogurt
  • 2 tbsp. honey
  • 1 tbsp. apple cider vinegar
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 16 ounces (about 2 c.) green peas, shelled
  • ¼ c. whole roasted almonds, roughly chopped
  • ½ small red onion, finely chopped

Directions

Prepare bacon according to package directions. Set bacon between paper towels and pat dry; chop into small pieces. In a large mixing bowl, stir together Greek yogurt, honey, apple cider vinegar, salt and pepper. Add peas, almonds and red onion. Toss gently to coat and serve chilled.

Yield:  4 servings
