Fall Salad

Ingredients

  • 2 cups mixed salad greens (Kale, Spinach, Lettuce)
  • 1 cup shredded broccoli stems (broccoli slaw)
  • 1 ½ cups shaved Brussels sprouts
  • 1 medium apple, shredded
  • 1/3 cup shelled pumpkin seeds (pepita seeds)
  • 1/3 cup dried cranberries
  • 1 recipe of the Poppy Seed Dressing

Directions

Mix salad ingredients together in a large bowl. Prepare Poppy Seed Dressing. Drizzle dressing over the mixed salad.

Yield:  6 servings 1 serving = 1 cup of salad with 1 Tbsp of dressing
