Double Chocolate Zucchini Bread

Ingredients
- 2 small zucchini (about 1/2 pound total) or 2 cups grated
- 4 cups flour
- 1/2 cup cocoa
- 1-1/2 cups sugar or 3/4 cup Splenda Blend For Baking
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 1-1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3/4 cup canola oil
- 3/4 cup unsweetened applesauce
- 6 egg whites
- 1-1/2 cup skim milk
- 2 teaspoons vanilla
- 1 cup dark chocolate chips
Directions
Heat oven to 350 degrees. Grease 2 (8x4-inch) loaf pans.
Combine flour, cocoa, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg together. Grate zucchini into a large bowl and combine with the oil, applesauce, egg whites, skim milk and vanilla. Stir the zucchini mixture into the dry ingredients until just blended. Stir in chocolate chips.
Pour batter into prepared pans. Bake until a toothpick stuck in the center of the bread comes out clean, about 1 hour 15 minutes. Cool on rack 10 minutes, then remove from pans and cool completely.
Yield: 32 servings (1 serving = 1 slice)
