Chickpeas with Spinach

  • 2 medium onions, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 2 cans of chickpeas
  • 1 1/2 cup of tomato, chopped
  • red pepper flakes, to taste
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 10 oz package frozen spinach, thawed, drained and chopped
  • Juice of 1 lemon
  • Salt and pepper to taste


In a large sauce pan, over medium heat, saute onions and garlic in olive oil until the onions are tender

Add chickpeas, tomato, red pepper flakes, oregano and paprika.

Cover and simmer for about 18 minutes, stirring occasionally.

Add spinach and cook until spinach is heated through, about seven minutes.

Add lemon juice, salt and pepper.

Serve in a bowl over brown rice.
