Chocolate Almond Mousse


  • ½ cup boiling water
  • ½ envelope (1-1/8 tsp.) Knox unflavored gelatin
  • 1 tsp. cocoa
  • Dash of cinnamon
  • 2 packets artificial sweetener
  • ¼ tsp. pure almond extract
  • ½ cup water
  • 1 packet Vanilla Beverage Meal Replacement


  1. In a blender; add hot water, gelatin, and sweetener.
  2. Blend for one minute.
  3. Add remaining ingredients and blend until well mixed.
  4. Pour into several small or one large serving dish.
  5. Cover and refrigerate at least 1½ hours or until set.
